I promise you the decorated cookie is not becoming the chocolate sandwich cookie. These tiny chocolate sandwich cookies are the last ones for awhile, I’m sure, so bear with me. But I just wanted to share what I did with some leftover dough.
- I used a 1/2-inch circle fondant cutter instead of the cookie cutter
- I only baked the cookies for six minutes
- I still made frosting bags with colors, but I used a size “5” tip and just piped a dot on each cookie before topping with the other one (you can probably also use store-bought frosting and just put it in a ziploc bag and snip the corner)
