cookbook giveaway!!!! BAKE! by Nick Malgieri

Perhaps you’ve heard of Nick Malgieri: former Executive pastry chef of Windows on the World, author of too many cookbooks to count, winner of too many awards to count, current director of the baking program at the Institute of Culinary Education, has cooked on television with the likes of Julia Child and Martha Stewart… Best if you read the long and impressive biography HERE. See? And I got to meet him. Not only meet Mr. Malgieri, but have lunch with Mr. Malgieri. And while I can hope that such baking greatness and knowledge can float across a restaurant table, I’m pleased to have that (transportable) greatness and knowledge packaged between the covers of Mr. Malgieri’s latest book: bake! Essential Techniques for Baking Perfection.

Each of the 20 chapters in bake! opens with an essential technique taught with gorgeous, step-by-step photographs, followed by variations of the master recipes. The result demystifies the world of baking for the timid or fearful, takes it from the hands of professionals and gives it to you and me. Essential techniques include pastry dough and tarts, cookies, puff pastry, breads and rolls, brioche, Danish pastry, cakes, and biscuits. Recipes include a chocolate meringue tart, ground beef empanadas, fig and raspberry croustades (see him making these on Martha), gruyere and walnut bread, pear and ginger cake, devil’s food bombe…

    I bake cookies all the time. I have become famous for my cookies, so I am always making them for church functions and such. Lately, I have learned how to make cut out sugar cookies and decorate them from some terrific blogs.

    I love to bake sugar cookies! I have collected cookie cutters for years and now that I have time (a 6 month old at home–ha ha on time) I have been spending a lot of time baking cookies and I even made cute crosses for my niece's Christening. Very exciting because my sister in law's sister in law asked me to bake crosses for her son's communion ! So exciting! Anyway, decorated cookies are my all time favorite thing to bake! Second would be cupcakes! yumm

    I got addicted to baking through cupcake doctor's book. I love her cupckaes- with homemade buttercream frosting of course. I also like to make pies and cakes. If I could do a better bread, I would make more, I need practice.

    Brioche is my favorite thing to bake! Living in the desert, it's impossible to find a good brioche, or ANY type of brioche for that matter. I have to bake it myself. I discovered a "French bakery" and was thrilled to see brioche on the menu. I placed my order and was disappointed. I was served a "sweet roll!" I then learned there are two types of brioche. Sweet and savory. I like the type that's individually baked in a fluted mold, topped with a small ball of dough. I bake them weekly.
    I found the world's best brioche in the Century City shopping center. That was years ago. I went there EVERY Saturday morning for my weekly fix. The bakery vanished and I left L. A.. I just wish I left with the recipe. There's nothing better than warm brioche and a cup of hot chocolate. I would LOVE to win a copy of this cookbook.

    oh, what a great opportunity to meet such baking greatness! i think my favorite thing to back would have to be honey wheat harvest spice cinnamon rolls. It's a twist on the cinnamon rolls my mom taught me to make growing up. with autumn all around us, the cinnamon, nutmeg, and apple scent wafting around the house, and the fire crackling, you can't help but love these!

    Alright, I actually have a signed copy of the cookbook because I attended one of Nick's demos, but would love a copy to give to my grandmother now that I see how incredible this book is. The step-by-step instructions, along with the "why" and "how come" explanations are unmatched in any other baking book.

    While my current favorite thing to bake is an inventive batch of cookies, Nick's book has inspired me to believe I can make solid pies as well. I would love to share this with my grandmother, who also likes baking.

    I love to bake anything and everything. 2 nights ago it was a yogurt cake with coconut yogurt, and tonight it'll be some cookies (I have 3 kinds of shortbread dough in the freezer – orange nutmeg, ginger oat, and salty peanut). :)

    I love to experiment, but my (and family's)favourites are my gateaux au chocolat, accidental apple tart, HK's banana bread and
    choco-chip pudding cookies. My daughter loves them, so maybe that's why I'm always happy to make them!

    My current favourite thing to bake is stuffed shells. It takes forever to prep and cook, but well worth it. My second fave would be baked stuffed cabbage. Yum.

    I've never been a fan of the kitchen except for making chicken enchiladas…but now that I have 6 children, I've been sucked it. I've been trying lots of new recipe's and love them all. I'd have to say the favorites in my house are Monster cookies and Chocolate Chip Bran Muffins. Love your blog!

    Hmmm…there are so many things that I like to bake – even though I have to admit my husband is a better baker than I am. Because we are in autumn and I love baking this time of year I will mention some of my favorites from this time of year – pumpkin bread, pumpkin chocolate chip cookies, and my very favorite white chocoloate pumpkin macadamia bars.     I am just discovering baking having always cooked and enjoyed that much more… I think I have stopped being afraid of baking and my new love is different kinds of cakes! The one thing that never works out for me is bread though, it's very frustrating!!!!!

    I love experimenting with new recipes whether they be savoury or sweet! And I always look for a way to make the recipe healthy(ier) so that I don't feel so guilty if I decide to eat the whole thing myself :)

    I love baking pretty much anything! Breads are way up there on the list. Is there anything better than a loaf of sweet white, right out of the oven? I think not. :)

    I LOVE baking these desserts that my mom has made as long as I can remember. (Thanks Mom!!) They're called Fatty bars, and they are full of yummy German chocolate, gooey caramel, and chocolate chips. So sweet and sensational, and easy to make! Sometimes I just make the dough and eat it raw cause it's so delicious :)

    I love to cook everything, but the dishes i like to cook most are those that get the most praise from the family. These are of cause desserts, i suppose this is because they usually look the best on the eye. I spend ages with the decorating, my best ever was my daughters Wedding cake. It was 4 tiers and i made swans for the main decor (swans mean they will never have another partner, it's for life)

    I like to bake applepie and almond cinnamoncookies, jammie!

    My children love me bake a "monchoutaart". Don't know the english word for it. It really isn't baking. I crunch cookies, called "Bastognekoeken". Add some melted butter to it. Put it in a baking***. Put it in the fridge to get cold and firm. Put some whipped cream and a young cheese cold Monchou together. Put this over the cookiebottum. Then finished it off with cherries on the top of the pie. Always a great succes, with so little effort.

    Hope I'm in time to draw in. In Holland it is nine o'clock in the evening :).

    My favorite thing to bake is to take a cresant roll, put a piece of canned whole chili pepper on it, and a piece of mild cheddar cheese on that and then roll it up and bake as directed. I can make myself ill eating these things my grandmother taught me how to make.
