Great little sandwiches! For years I've been making "Peanut Butter and Fluff" cookies:
Sugar cookie dough rolled and rubbed with some hot cocoa mix (end result = crust) and sliced and pinched to resemble bread slices, bake. Make sure the side of the cookies that were on the baking sheet are the outside of the sandwich cookie (looks very toasted-bread-like), sandwich two together with a little peanut butter and a little marshmallo fluff. Wrap individual cookie sandwiches with waxed paper and "serve" in a brown paper lunch bag. Fun!
