I think the bigger issue would be a leavening, but since this recipe doesn’t have baking soda or powder, it should be OK even with the salt. The cookies might just be a bit puffier. However, I’ve never tried to bake them with self-rising flour, so that’s my disclaimer :) . Just a non-tested theory!
