I really love this particular post I made for Kix Cereal because I got to have a mini Thanksgiving meal weeks ago to write it. And yum, I’m pleased with the results.
The sandwich sushi is surprisingly delicious, as I was skeptical about the concept. Mix cream cheese and cranberry sauce on bread, pile with your leftovers (turkey, stuffing, potatoes, whatever), roll up and slice. I ate them all as soon as I finished taking the photographs.
But what really got me? The mashed potato coins. I’m more a baker than a cook, so when I actually create something savory that tastes delicious, I need a parade and many accolades. It doesn’t happen often, folks. Small balls of cold mashed potatoes, flattened, brushed with egg and coated with Parmesan and panko bread crumbs, then baked–not fried–to a golden crisp. I could eat a jillion of them.
