So this is about it for me in the immediate future… on Monday I go in for surgery to have my second daughter. The surgery is a bit more complicated than a standard C-Section (it involves things like other surgeons and main ORs), so I’ll be down for the count for quite awhile. Luckily, the clever, amazing, talented Glory of Glorious Treats is taking over today’s post to give me a bit of a respite before the big day. I’ve been a huge fan of Glory’s for ages now. She adds a certain magical elegance to all her sweets, even when making a Fruit Pebbles Treat birthday cake, not to mention how she captures the sweet perfection in her photography so beautifully. See? This is just a sampling. (Find Glory’s Recipe Index HERE.)

I’m thrilled she’s visiting today! Thank you, Glory!!

Hello sweets lovers! I’m stopping in to “blog-sit” today and hopefully give Meaghan a few days of rest before her sweet baby #2 arrives.

I love the way Meaghan can take simple sweets and make them into something so cute and creative! I did my best to channel her creative genius, and came up with these Christmas Rice Krispies Trees.

I love the simplicity of rice krispies treats, and like finding new ways to dress them up! Earlier this year I made some Watermelon Slice Krispie Treats, and then some fun Candy Corn Krispie Treats, and thought the same concept would work perfectly for Christmas trees. The extra fun thing about the trees is, once they are cut, you can have fun decorating them just as you would a cookie. These would be a great alternative for a cookie decorating party.

Let’s get started!

You’ll need…

9 cups rice krispies cereal

9 cups mini marshmallows

6 tablespoons butter

green food coloring

assorted sprinkles, melted chocolate or royal icing

Directions-

Prepare 2- 8″ round cake pans by spraying the with non-stick cooking spray.

Put rice cereal in a large bowl.

In another large bowl, add marshmallow and butter. Microwave marshmallows and butter 3-4 minutes, or until super puffy and the marshmallows are beginning to melt together.

Carefully remove from microwave, and stir well. Add green food coloring (I used a couple drops of Americolor mint green).

Quickly pour green marshmallow “sauce” over rice krispies and stir with a spatula that has been sprayed with non-stick cooking spray. As soon as all the cereal is incorporated, divide mixture between the two pans, and press into the pans until level and slightly compacted.

Allow krispie treats to cool about 30 minutes. When cool and firm, flip pans over onto a cutting board to remove rice krispie round. Cut the large circle into 6 slices (as you would pizza), using a large serrated knife.

Wrap or decorate rice krispie “trees” as desired. If you plan to add a stick (as pictured), I would suggest adding it before adding the decorations. If you add the sticks after they are decorated (as I tried to!), it may disturb your decorations. I used striped paper straws as sticks, but you could also use white cookie sticks (available from any major craft store).

Recipe yields 12-16 trees.

An easy, last minute treat for your 4th of July that will add a bit o’ fireworks to your dessert table… Pop Rocks marshmallow pops!

And in case there are any safety concerns, that story about Mikey from the Life commercials meeting his fateful end with a combination of Pop Rocks and soda, it’s an urban legend. (Oh, you weren’t born in 1972 and have no idea what I’m talking about? Google “Mikey + Life cereal + Pop Rocks.”)

While I usually add my sparkle to marshmallows by dipping in water first (see here or here or here and lots more places on my blog, but I won’t keep you traveling via links), that didn’t work with Pop Rocks, because the water made the candy a bit of a melted mess. So instead, see what I did below. And if you want to tell you’re guests these are sprinkles and let them be surprised by the explosions, I won’t judge.

how to make Poppin’ Rockin’ marshmallow pops

you will need:*

marshmallows

straws or lollipop sticks

light corn syrup

paint brush

Pop Rocks

Styrofoam block or wax paper

*I found the paper straws in a super cool shop by me (Trohv), and you may find them in super cool shops near you. Or online. If you can’t find them before the 4th, just use lollipop sticks from the craft store. My supermarket didn’t have Pop Rocks (?), but I got some at the craft store. I just ordered more Pop Rocks in bulk from Oriental Trading, since a little pack is kind of pricey.

what to do:

Skewer a marshmallow with a straw or stick. Paint a thin layer of light corn syrup around the outside of the marshmallow. Sprinkle Pop Rocks over the painted area (I sprinkled over a bowl so I could save the excess, and because Pop Rocks are costlier than sprinkles, I wasn’t too generous with the sprinkling). Prop in a Styrofoam block to dry or prop upside down on a piece of wax paper.

Earth Day is April 22 this year. Do you have an Earth-saving plans this year? Marshmallows can’t save the world, but maybe they’ll make a day of planting trees or attending an Earth Day event taste sweeter.

I’m still working my way through my box of candy from Wrigley. And since most of the weight of the box comes from the two huge bags (as in 54 ounces, times two!) of Skittles®, I had to make something with that rainbow of candy.

By the way, have you seen the Skittles® site yet? It’s surreal, slightly bizarre and crazy impressive.

So what did I do with the Skittles? I pulverized them. And dumped them into paper straws. And they are delicious.

I tried the blender and food processor first, but the coffee grinder worked best. Now I will warn you if you try and make these, I don’t know what long-term damage grinding candy in a coffee grinder can do, so I’d stick with an inexpensive grinder. I’m pretty sure my grinder is mad at me now, but at least it worked. Except my coffee will probably taste like Skittles for months.

First I separated out the colors. Did this take a long time? Yes, it did. But the the sweet smell was intoxicating, so I didn’t mind.

Then, I ground and ground the colors in the grinder and ended up with this lovely powder (um, after digging out all the chunks that didn’t grind) and poured the powder into bowls.

To fill the straws, I folded one end and propped the straw in a cup. Cut a square of parchment paper. Use your fingers to grab a pinch of the ground candy from a bowl, then give the candy an extra grind through your fingers onto the parchment paper. This extra grind is to make sure there are no big bits in the candy. Also, sitting in the bowls, the candy starts to lump together a bit, and it’s easiest to pour into the straws when it’s powdery. (Because I used no additives, the powder can clump in the straws, too, so you may have to squeeze the straws to break up any stuck pieces.) Fold the parchment to help pour into the straws. I spilled some, but the cup helped catch the excess.

Then just fold over the top and that’s it. Yum. Each color really does have a different flavor.
