Christmas chocolate bark
Chocolate bark is one of the easiest Christmas candies to make and give.
It only takes minutes to put together, tastes delicious, and it fills up gift boxes quickly since it’s so irregularly shaped. I’ve been on a bit of a Christmas chocolate bark bender.

And now: Gingerbread man chocolate bark with white chocolate, gingerbread cookies and gum drops.
tips to make gingerbread chocolate bark
I used store-bought gingerbread cookies and gumdrops to make things easy, but you can of course make your own gingerbread family.
The recipe below makes a pretty small batch of chocolate bark, only about 8 pieces. If you’d like to make more, you can double the recipe and it should then fill the entire baking tray.

how to make gingerbread man chocolate bark
you will need:*
1 11-ounce bag (2 cups) of white chocolate chips
6 to 8 small gingerbread man cookies, store-bought or homemade gingerbread cookies
15 to 20 gumdrops
*NOTE: This is a small batch of chocolate bark, about 8 pieces. You can double the recipe and it will fill the entire baking tray for more pieces.
what to do:
Line a baking tray with wax paper and set aside. Cut the gumdrops in half horizontally and set aside.
In a microwave-safe bowl place the chocolate chips. Melt according to package directions.
Pour the chocolate on the prepared baking sheet. A single batch will not fill the whole tray. Immediately press the gingerbread cookies into the chocolate and decorate the rest with the halved gumdrops, cut side down. Press the gumdrops into the chocolate to secure them.
Let set just enough that when you touch the chocolate it does not stick to your fingers (this may be 15 to 30 minutes). Score the chocolate where you will want to cut it with a sharp knife.
Let the chocolate fully set and separate the pieces.
