Rice Krispie Treat cupcakes
I just found these photos of Rice Krispie treat cupcakes on my computer. If I recall, I made these for a friend’s birthday last year. That’s how far behind I am (shaking head). Alas, not even sure if I remember how I made them. So I’ll muddle through with some instructions.
to make mini Rice Krispie treat cupcakes
you will need:*
Rice Krispie treat recipe
*For the icing, either thin store-bought with some milk or use this recipe for poured sugar icing, and add white food coloring if you like. For food coloring (Bright White or Red Red), I use Americolor soft gel pastes. For the licorice lace, Twizzler’s Pull n’ Peel work and are widely available. Find the fondant, cupcake liners and sprinkles in the craft store. For tips on finding cookie decorating supplies click HERE.
step one: make Rice Krispie treats
Line the mini cupcake pan with cupcake liners. Make Rice Krispie treats, roll in little balls and stuff into the liners to shape. Let them set and pull out the cupcakes with the liners.
step two: frost the cupcakes
Prepare icing, dip the tops of the “cupcakes” in the frosting and immediately sprinkle with sprinkles.
step three: add the cherry
Knead red food coloring into a wad of fondant (if fondant gets too sticky from overhandling, let rest at room temperature uncovered for about 15 minutes until easily pliable). Roll a small piece of fondant into a ball. Snip a piece of licorice and insert into the top of the ball. Stick on top of the cupcake, using a dab of icing to adhere if needed.

I think this is a darling idea but i am not fond of fondant….don't like the taste. I am going to dip mine in melted white chocolate and then add a cherry candy on top. Thanks for the great idea, I am a pre-k teacher and this would be a great "special snack" for my class without being too much sugar! Thanks!

Totally agree about the fondant! As I made them I thought, dang, should've bought candy instead 🙂 I'm pretty sure my own pre-K age kid would think you were the coolest teacher ever for giving her a Rice Krispies cupcake.
