Firefly cookies, a fun treat for summer.
Ingredients
- cookie dough
- royal icing
- bee cookie cutter
- food coloring (Super Black, Red, and Sky Blue used here)
- disposable decorating bags
- couplers
- tips, size 3
- yellow candy melts
- lollipop sticks
Instructions
Prepare the cookie dough, chill, and cut out the bugs. Arrange on the baking tray and insert sticks. Bake according to the recipe and let cool. (The recipe page has tips on making cookie pops.)
Prepare the sugar cookie icing (royal icing) according to the recipe, divide, and tint your colors. The black icing should be of piping and outlining consistency (a little thicker) and the red and blue should be thinner. Prepare decorating bags with couplers and tips, fill with colors, and tie closed tightly with rubber bands.
Outline the design with the black icing and let set about 10 to 15 minutes. Fill with the red and blue.
Melt yellow candy melts in a disposable decorating bag in the microwave on 70 percent power for 90 seconds. Massage and continue to microwave at 15 second intervals until fully melted, being sure the candy does not get too hot. Snip the tip of the bag. Pipe a yellow circle on a baking tray lined with wax or parchment paper. Rest a firefly cookie pop on top. Let the cookies and light dry very well, overnight.

Now, yes, I’ve called these firefly cookies. But I actually call them lightning bugs. I just figured a greater number of you use the term “firefly.” I even found this map that shows who says what and where. Do you call them fireflies? Or lightning bugs? And do you have them flying around your yard during the hot summer months? For me, the first time I see that butt light up every year is the first official sign of summer.
These firefly cookies would be a perfect addition to any summer-themed party, BBQ, pool party, beach shin dig, whatever.
