Perhaps you’ve heard of Nick Malgieri: former Executive pastry chef of Windows on the World, author of too many cookbooks to count, winner of too many awards to count, current director of the baking program at the Institute of Culinary Education, has cooked on television with the likes of Julia Child and Martha Stewart… Best if you read the long and impressive biography HERE. See? And I got to meet him. Not only meet Mr. Malgieri, but have lunch with Mr. Malgieri. And while I can hope that such baking greatness and knowledge can float across a restaurant table, I’m pleased to have that (transportable) greatness and knowledge packaged between the covers of Mr. Malgieri’s latest book: bake! Brioche is my favorite thing to bake! Living in the desert, it's impossible to find a good brioche, or ANY type of brioche for that matter. I have to bake it myself. I discovered a "French bakery" and was thrilled to see brioche on the menu. I placed my order and was disappointed. I was served a "sweet roll!" I then learned there are two types of brioche. Sweet and savory. I like the type that's individually baked in a fluted mold, topped with a small ball of dough. I bake them weekly.I found the world's best brioche in the Century City shopping center. That was years ago. I went there EVERY Saturday morning for my weekly fix. The bakery vanished and I left L. A.. I just wish I left with the recipe. There's nothing better than warm brioche and a cup of hot chocolate. I would LOVE to win a copy of this cookbook.
