I’ve been on a mini stuffed peppers kick lately. They are so easy to turn into quick appetizers or a side dish, and you can stuff them with pretty much anything (I have a few ideas below for you).
For this recipe, I chose goat cheese and Trader Joe’s brilliant Everything bagel seasoning blend.
how do you make mini stuffed peppers appetizer or side dish?
I’m glad you asked! It’s easy. Really. For these goat cheese peppers, I use only three ingredients:
- 1 pound mini peppers
- 10 ounce log of goat cheese
- Everything Bagel seasoning
Find a printable recipe below, but here are the basic how-tos:
- Position the oven rack in the top third of the oven. Preheat to 425 degrees F.
- Wash your mini bell peppers and slice in half. You may trim the stems, but I prefer to leave them on because I think they look cool.
- Use a small spoon to scoop out the seeds and extra flesh. Rinse the peppers again to remove any clinging seeds. Pat the peppers dry.
- Line a baking tray with parchment paper and arrange the peppers, cut side up.
- Fill with your filling. Here, I add about a tablespoon of goat cheese to each pepper. (Place the log of goat cheese in a bowl and break it up with a fork so it’s easier to fill the peppers.)
- Sprinkle the top of the filled peppers with a generous amount of Trader Joe’s Everything Bagel seasoning.
- Bake until the peppers are still tender, but the top begins to brown, 15 to 18 minutes. If you like, broil for 2 to 3 minutes to brown the top further.

what goes with mini stuffed peppers?
Use the basic method above, but substitute any of these other fillings for your mini stuffed peppers:
- make pizza peppers! Stuff with pizza sauce, bits of pepperoni or sausage and top with mozzarella cheese
- feta, garlic, and lemon zest
- mix cream cheese with shredded parmesan, garlic powder, and snipped fresh herbs
- combine cooked ground turkey or beef with cooked rice, diced tomatoes, and plenty of spices
- try black beans and diced tomatoes with taco seasoning
- mix goat cheese with parmesan, garlic, chopped artichokes, and fresh spinach
- blue cheese and lemon zest
Are mini peppers the same as bell peppers?
Mini peppers are very similar to bell peppers, but they are even sweeter and smaller.
They also have less seeds, which make them ideal for cooking. Y
ou can’t fit quite as much filling in the peppers, so they are best used for appetizers and side dishes, whereas stuffed bell peppers are better for a main dish. The mini peppers shown here are sweet, not spicy.
