If you choose cookies over candy, these peppermint candy cookies are the perfect solution for Christmas. Here I simplified the design so you didn’t have to mess with a perfect swirl pattern, but they are still very much recognizable as the classic candies.
how to make peppermint candy cookies
you will need:*
royal icing
circle cookie cutter
food coloring (white, red and/or green)
1 disposable decorating bag
1 size “4” decorating tip
rubber band
white rolled fondant (find at the craft store)
wax paper
sharp knife
light corn syrup

Prepare dough and icing according to the recipes and cut out circle cookies. Bake and let cool.
Color frosting with white coloring and prepare a frosting bag with size “4” decorating tip. Outline circles with white frosting and let set about 15 minutes. Flood the circles with thinned, white frosting and let set well, at least an hour.
Knead a few drops of red and/or green food coloring into a handful of rolled fondant very well. Roll fondant between two pieces of wax paper about 1/8 inch thick. Cut out circles with the cookie cutter and let stiffen about 15 minutes. With sharp knife, cut triangles from circles and adhere to top of decorated cookies with light corn syrup. Let dry overnight before packaging cookies. (Tip: If fondant gets sticky when kneading, let sit at room temperature uncovered for 15 minutes.)
