I’ve been wanting to make these “pumpkin pie” cheese and crackers for a Thanksgiving appetizer for years, ever since I first spotted the brilliant idea over at Project Denneler.
Sandra, of Project Denneler, is one of the smartest, most clever food crafters that ever existed (check out her site, I’m not exaggerating), and she also happens to be perfect, so hers are, well, more perfect than mine. But they are still super easy to make and a fun idea for Thanksgiving.

you will need:
- Triscuit Thin Crisps
- Chicken in a Biskit
- light cream cheese
- block(s) of cheddar cheese
- disposable decorating bag
- size 21 decorating tip

The crackers go well together because the Chicken in a Biskit crackers are about the same length as a side of the triangle-shaped Triscuits. The idea of “chicken” in a cracker, admittedly, is odd to me. You can use any comparably-shaped crackers that will work!
Choose light cream cheese instead of regular because it’s the perfect consistency for piping. The decorating tip is an open star tip, and you can also use any comparable tip for piping the “whipped cream” on the cheese.
I would err on the side of buying too much cheese. Triangles from a block are a little awkward to cut, so it’s best to have extra.
what to do:
Put the decorating tip in the decorating bag and snip the top. Fill with cream cheese and close tightly with a rubber band.
Cut triangles from the block of cheese to fit on a Triscuit thin crisp. Each triangle ended up being a little over 1 1/2-inches on each side and 1/2-inch high.
Use the cream cheese in the decorating bag to dab a bit of cream cheese on a Triscuit and place the cheddar triangle on top. Dab a little bit on the bottom half of a Chicken in a Biskit cracker and attach to one end. It doesn’t take very much cream cheese to adhere the crackers.
Pipe a dollop of cream cheese on top for “whipped cream.”
