I make this awesome vanilla mug cake recipe easily once a week for my daughter (sometimes more), and it just occurred to me, maybe you also have a cake-craver in your house.
Ready in minutes, this cake puffs up perfectly in the microwave. This recipe makes 2 mug cakes, because who wants to divide and egg and waste half? Keep the extra mug cake in the refrigerator for up to a few days. Or eat them both. I won’t judge.

vanilla mug cake recipe
you will need:
- 2 tablespoons butter, melted
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1/4 cup sugar
- 6 tablespoons self-rising flour
- pinch of salt
what to do:
In a microwave-safe bowl, place the butter and melt in the microwave for 15 seconds. Add additional seconds just until melted.
Whisk in the egg, milk, and vanilla extract. Add the sugar and stir well. Add the flour and salt and stir well until the mixture is smooth.
Spray two mugs with canola oil OR coconut oil spray. Divide the batter between the two mugs. Microwave one mug at a time for 1 1/2 to 2 minutes, or until the cake puffs up.
The mug cakes take 1 1/2 minutes in my microwave.
