Oh my word, this baked popcorn chicken with Corn Flakes crumbs is so easy to make but addictive-delicious.
I’m not sure why it’s called “popcorn” chicken aside from the bite-size pieces and the aforementioned “addictive-delicious” thing. Just like popcorn (or in my case, Doritos), you can’t stop eating this stuff.
And I’m just going to go ahead and call this (relatively) healthy if you consider all the vitamins and minerals packed in Corn Flakes and the oil saved by baking instead of frying.
The butter and flour part is less healthy, admittedly, but life is about balance.
Here I use pre-packaged Corn Flakes crumbs because, well, I’m busy. And it’s just easier.
But you can of course just smash up the whole cereal, too, or grind some up in your food processor.

how to make baked popcorn chicken with Corn Flakes crumbs
you will need:
- 1 pound boneless, skinless chicken breasts cut into bite-size pieces
- 1/4 to 1/2 teaspoon coarse sea salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- black pepper
- 4 tablespoons butter
- 1 cup Corn Flakes crumbs
- 2 tablespoons all-purpose flour
what to do:
Preheat oven to 425 degrees F (or 450 for crispier chicken, just reduce the baking time by a few minutes). Line a baking tray with parchment paper and place a wire rack on top. Spray the wire rack with cooking spray. Set aside.
Sprinkle the cut chicken with salt, garlic powder, paprika and pepper. In a large, microwave-safe bowl, melt the butter. Add the chicken and stir to coat.
In a shallow dish, mix the Corn Flakes and flour. Dip the chicken piece-by-piece in the Corn Flakes mixture and place on the prepared tray. For extra crispiness, lightly spray the chicken before baking with additional cooking spray (optional).
Bake about 15 minutes or until the Corn Flakes are golden and the chicken is no longer pink.
