No time to make a gingerbread house this year? Make this gingerbread cake instead. Here, I used Wilton’s Christmas icing decorations because they are so freaking cute.
To make the Bundt cake, I technically used an angel food pan because I wanted a smoother surface to decorate.
For the gingerbread flavoring, I love my gingerbread cut-out cookies so much, I used the same spices in the same amounts. This cake is really easy to whip up, and the icing even easier. And with the decorations, it could definitely be a substitute for a gingerbread house this year.

how to make a gingerbread Bundt cake

for the gingerbread Bundt cake, you will need:
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon ground ginger
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 3/4 cups (12 tablespoons or 1 1/2 sticks) softened butter
- 1 1/2 cup packed brown sugar
- 2 eggs
- 1/2 cup molasses
- 1 cup water
for the icing, you will need:
- 2 cups confectioner’s sugar
- 2 to 4 tablespoons milk
- 1 teaspoon vanilla extract (and/or other flavorings)
- pinch salt
- disposable decorating bag (optional)

Preheat the oven to 350 degrees F. Grease an Angel food pan with softened butter or cooking spray, and sprinkle with flour lightly. Set aside.
In a bowl, briefly whisk together the flour, baking soda, salt, baking powder, and spices. Set aside.
In a large bowl with a hand mixer or in the bowl of a standing mixer, combine the butter and brown sugar until well blended and fluffy. Add the eggs, one at a time, blending after each addition. Add the molasses, mixing well.
Mix in about a third of the flour mixture. Add half the water and mix. Continue alternating the flour and water until the mixture is well blended.
Pour into the prepared pan. Bake until a toothpick comes out clean and the surface springs back when lightly pressed, about 45 to 55 minutes.
Cool and decorate.

Whisk together the sugar, 2 tablespoons of milk, vanilla extract (or any other flavorings you like, such as 1/2 teaspoon of orange extract), and salt.
Add another tablespoon or two of milk if the consistency is too thick (but err on the side of thick, because you want the icing to stay on the top of the cake and be thick enough to hold the decorations.)
Spread the icing on the cake, or, fill a disposable decorating bag with the icing and snip an inch from the tip. Pipe the icing on the cake. You will have some icing leftover for decorating (see below).

how to decorate the gingerbread cake
To decorate the cake, you will need:
- white sprinkles
- Wilton Christmas tree icing decorations
- Wilton gingerbread house door and window decorations
- Wilton gingerbread man icing decorations
- Wilton Santa, sleigh, and reindeer icing decorations
what to do
Immediately after putting icing on the cake, sprinkle sprinkles on the icing. Use the remaining icing to help with decorations. On top of the cake, perch Santa, his sleigh and sack of toys, and the reindeer in the icing. If necessary, pipe some icing behind the decorations so they stand up. Add some Christmas trees.
Use dabs of icing to adhere the gingerbread men, door, and windows to the side of the cake. Add more gingerbread house decorations, if desired, to the top of the cake.
Let the icing set and serve.
