This is my favorite banana bread recipe, one I’ve baked for years, and it also happens to have wheat germ and flax seed meal in it. It’s flavorful, dense and the wheat germ and flax seed give the bread a sort of richness. (Geez, as a food blogger, I’m terrible at describing what food tastes like, and I’m actually eating a piece as I type.) It’s good, alright?
My 8 year old loves it. That’s huge. Big. She’s picky even for picky eaters. As in, I can list what foods she will eat and it won’t take long.
Plus, you have all kinds of vitamins in there.
Feel free to add any of your favorite mix-ins, like nuts or chocolate chips. I might even try tossing some chia seeds in there next time. And cinnamon. You can also make banana bread in cute mason jars.
how to make banana bread with wheat germ and flax seed
you will need:
1/2 plus 1/3 cup all-purpose flour
1/2 cup wheat germ
1/4 cup flax seed meal
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
6 tablespoons butter, softened
2/3 cup sugar
2 very ripe bananas
what to do:
Preheat the oven to 350 degrees F. Lightly spray a bread pan and set aside.
Whisk the dry ingredients. In a large bowl with a hand mixer, or in the bowl of a standing mixer fitted with the flat beater, blend the butter and sugar until fluffy.
Blend in the eggs and bananas. Add the dry ingredients and mix well. Pour into the prepared pan. Bake for 50 minutes, or until baked through.
