This unicorn bark made from chocolate or candy melts is the best treat to make for a unicorn or rainbow party.
OK, I know if you google unicorn bark (or “unicorn chocolate bark” or any variation thereof) you’ll find a billion jillion unicorn barks.
(Thanks food trending! Especially unicorn food trending.)
But I still feel like I can call this “the best unicorn bark” because it actually has real unicorns.
I mean, not “real” unicorns, I couldn’t find any of those and I wouldn’t eat them anyway.
But actual unicorn figures. The interwebs has taken great liberties with what it calls “unicorn food” these days. Chocolate bark, candy, cookies, milk shakes, hot cocoa, fudge, you name it, it can be “unicorn food.”
But usually it’s just really rainbows and sprinkles that make it “unicorny”, right? Here. Real unicorns. The best unicorn bark.
To make the unicorns, I use candy clay. Candy clay is a magical mixture that works like fondant but tastes more like a Tootsie Roll.
To make it, mix a bag of candy melts (melted in the microwave) with 1/4 cup of light corn syrup. It can be finicky, so I follow the instructions of Beth from Hungry Happenings. She is the candy clay master.

how to make unicorn bark
you will need:*
white candy clay (how-tos below)
1 1/4-inch circle cookie cutter
gold luster dust (and vodka or a clear extract)
black edible writer
royal icing flowers
jumbo rainbow nonpareils
bright pink candy melts
*Find much of the above in the craft store or click the affiliate links to find online. Candy clay can resist food writers because of the oils, but I find the black Gourmet Writer works well on candy clay. If you want to avoid the food writers, you can also use candy eyes.
what to do:
First prepare the candy clay (see below) to make your unicorns.
Roll it out and cut out circles for the unicorn heads.
Cut out little circles with the plunger cutters and pinch into ear shapes. Smush the ears to the top of the circle. Pinch a bit of candy clay and roll the horns. Smush those on the circles too.
Press a royal icing flower into the circle at the base of the horn. If necessary, dab a bit of light corn syrup so it adheres better.
Use the edible writer to draw eyes.
Mix some luster dust with a little bit of vodka or clear extract and use the paintbrush to paint the horns gold.
Let the unicorns sit on a tray lined with wax paper until they stiffen, about 30 minutes.
To make the bark,
line a baking tray with wax paper and set aside.
Melt a bag of pink candy melts in the microwave: Melt for 90 seconds at 70 percent power. Stir and continue to microwave at 15 second intervals until the melts are almost melted. Stir until fully melted.
Scrape the candy melts on the baking tray and spread evenly.
You will fill only a little more than half of the tray.
Carefully place the unicorns on the melted candy melts and sprinkle the sprinkles. Let the bark sit just until it’s set but still malleable. Score lines in the bark with a sharp knife.
Let the bark fully set (at least 30 minutes) before separating the pieces. Enjoy the magic!
how to make candy clay
**To make the candy clay:
Melt a bag of bright white candy melts the microwave just before the candy melts fully melts.
Stir the candy melts so the residual heat fully melts the candy melts (do not overheat the candy melts). Once the temperature is about 90 degrees F, stir in 1/4 cup of light corn syrup.
Stir well and let the candy clay rest. Wrap well in plastic wrap and keep at room temperature. To work with candy clay, just knead until it’s the right texture. If it’s too sticky, let it sit out a bit.
This silicone mat is a great tool to use under the candy clay when rolling it out or shaping it. Candy clay will store for months. Just knead it well if it stiffens.
