This no-bake strawberry spread with pie chips makes a delicious, easy Summer dessert.
I’m not usually one for straight dessert recipes. Nah, I usually like stuff on a stick, shaped funny or drawn on. But I made an exception, just for DOLE. And for Foodie. And for Craft Gossip. Because these three elements combined in kind of confusing ways to compel me to come up with a recipe for the DOLE® California Cook-Off Contest. And one of the most important rules of the contest is to prepare your recipe on a grill or stove-top. Yikes! I bake! But, I give you some delicious strawberry spread with pie chips.
But after many hours in the kitchen messing around with chocolate and strawberries and blueberries and lollipop sticks and butter and salt and so many different things to the point that I did nothing but eat desserts all day, I came up with this simple, easy, super yummy strawberry spread and pie chips. YUM. So so melt-in-your-mouth good.
This easy-to-make strawberry spread is full of flavor and super versatile. Serve it warm or cold, as an appetizer, snack or treat. Use it as a dip for tortilla chips or crackers, or as a spread for bread. Taking inspiration from strawberry pie, I made a sweeter, more indulgent snack: pie crust chips. Flaky, melt-in-your-mouth pie chips are so delicate, you need to spoon the spread on top. And after all day in the kitchen, my end result recipe takes only about half an hour from beginning to end to make. Did I say “Yum”? “Yum.”
how to make strawberry spread with pie chips
- 2 c Dole Fresh strawberries, hulled and chopped
5 tbsp butter, divided1 tbsp granulated sugar2 to 3 cinnamon sticks1 frozen pie crust, thawed and chilledadditional cinnamon and sugar for sprinkling
Step 1To prepare the strawberry spread, you will need the strawberries, 2 tablespoons of butter, 1 tablespoon of sugar and cinnamon sticks.
Step 2Melt the butter in a skillet over medium heat. Add the strawberries and sprinkle with the sugar. Grate some of a cinnamon stick over the strawberries, then add the cinnamon sticks to the mixture. Cook over medium heat, breaking up the strawberries with a spatula and stirring frequently, until the strawberries are very tender and the juices thicken, about ten minutes. Remove the cinnamon sticks. Serve warm or cold. Makes 3/4 cup spread.
Step 4Melt the butter in a skillet over medium heat, and lay the pie chips in the skillet in a single layer. Cook the chips until lightly browned on the underside, about 3 to 4 minutes, flip, and brown the other side, about 3 to 4 more minutes. Transfer the chips to a baking rack. Sprinkle with additional cinnamon and sugar, if desired. Serve warm or room temperature. Makes 20 chips.
