You read that correctly: Crock pot turkey chili with beer and kale. Before I lose you with the kale, I promise you it’s optional.
Although, I throw everything in this chili and it’s freaking delicious. Seriously, everything.
The ingredients may seem like a bizarre combination, but it’s one of the easiest and tastiest things I make for dinner. Serve with cornbread and/or rice.
If you’re not a kale fan, you may omit that. I just put kale in everything, especially when I’m too lazy to make a vegetable side dish. I’ve also added basil before, and it’s fantastic.
This recipe is very versatile. A little more or less of this and that is fine.

As in, it’s good to be my husband who gets to come home to dinners like this all ready for him. Especially when there is beer added to my recipes.
In this recipe, I use a bit less than a bottle. (As in, I take a few swigs.)
I should also note that my husband is a non-onion eater, so if onions are your thing, you can add some to this recipe. Also, for the beer, I suggest something in a lager or a light-ish ale, like an IPA. This Brooklyn ale I chose this time around was probably a bit too much.
Vegan? No problem. Omit the ground turkey and add additional beans.

how to make crock pot turkey chili with kale and beer
Spray crock pot with non-stick spray. Put all of this in the crock pot, stir together, and cook on low for 4 to 6 hours, or on high for about 2 to 3 hours:
1 to 1 1/2 pounds ground turkey, crumbled and cooked in a saute pan
3 cloves garlic, minced
2 14.5-ounce cans of no-salt-added diced tomatoes (juices included) OR 1 can of diced tomatoes and a cup of chopped fresh tomatoes (any preferred kind)
1 8-ounce can of tomato sauce
2 small apples, cored, peeled and chopped
1 can of red kidney beans, rinsed and drained
2 handfuls of kale, shredded (I use these shredding scissors)
2 to 3 tablespoons chili powder
2 tablespoons curry powder
2 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1 4-ounce can green chili peppers (optional)
1 12-ounce bottle of beer, minus a few swigs (IPA is a good choice)
good pinch of kosher salt and black pepper to taste
