chocolate peppermint cookies 

I love these. I suppose that lacks humility to say, but I love these chocolate peppermint cookies. The cuteness, the chocolate-ness, the minty-ness. Everything. And… I’ve found my newest chocolate cut-out cookies. I came up with the recipe from a box of chocolate cake mix, so it’s easy to whip up in minutes. Did I mention I love these?

chocolate peppermint cake mix cut-out cookies 

To make the cookies, combine:

1  chocolate cake mix
1 stick (1/2 cup) softened butter
1 egg 
1 teaspoon vanilla extract
1 teaspoon peppermint extract
 
Cover and chill for 2 hours. Roll out on a floured surface, cut out your shapes, and bake on a parchment paper lined baking tray in a preheated 375 degree oven until the edges are firm, 10 to 14 minutes. 
 
 

to decorate the cookies 

Roll out some store-bought white fondant on a surface dusted with confectioner’s sugar. Cut out circles with the same cutter you used for the cookies. Knead red food coloring into some fondant, roll it out, and use a pizza cutter to cut out small strips (and then rectangles.) 
 
To assemble the cookies, spread some store-bought frosting (bonus points for stirring in some peppermint extract!) on the cookies. Place a white circle of fondant on top. Add the red fondant with dabs of light corn syrup. Add smiley faces with a black food coloring pen.
