Remember that fun food blogger retreat I went to last week with Beth of Hungry Happenings, Kim of The Partiologist, and Norene of Party Pinching? Kim turned Donut Holes (skip the trip to the bakery and keep these in the freezer!) into a football. Beth turned the Donut Holes into apples for fall and Pimento Cheese Bites (made with South Carolina’s Palmetto cheese, coated in crisp breading, and with a Red Pepper Jelly dipping sauce) into a spooky Halloween appetizer. Norene chose the Fiesta Chicken Roll-Ups (comes with Baja-style dipping sauce!) and made mummies. Me? I went with the Mozzarella Bites turned into pumpkins! These Mozzarella Bites are made with 100% real mozzarella cheese and serve as a good source of calcium and protein.
Not to pat myself too hard on the back, but I looooved the Mozzarella Bite Pumpkins Appetizer or snack. The Mozzarella Bites are puffs of delicious cheese surrounded by pizzeria dough and baked to perfection. Here, before baking, I coated the Bites with crushed nacho cheese chips (um, yum) and before serving, I added a pretzel and parsley leaf. Crazy cute.
how to make Halloween pumpkins appetizer
you will need:
- 12 Farm Rich™ Mozzarella Bites
- nacho cheese chips
- 2 tablespoons butter
- 6 pretzel sticks
- parsley leaves
what to do:
Preheat the oven to 375 degrees F. Line a tray with parchment paper and set aside.
In a food processor, process about a quarter of a 19.2 ounce package of Nacho Cheese chips. You should have about 1/2 cup of pulverized chips. Place in a shallow bowl.
Melt the butter in a small bowl. Brush a frozen Mozzarella Bite with butter to cover the tops and sides (the underside is not necessary). Roll the Bite in the crushed chips to coat. Place on the tray. Repeat with the remaining Mozzarella Bites. Here, I used half of a box to make 12 Mozzarella Bites. (Recipe may be easily doubled.)
Bake the Mozzarella Bites according to package directions. Let cool a bit to handle.
Break the pretzel sticks in half. Hold a parsley leaf at the top of the Mozzarella Bite and insert a pretzel stick half so the edge of the leaf is also inserted into the Mozzarella Bite. Serve!
